A well-poured beer is always a pleasure. To enjoy its aromas to the fullest and create a beautiful head of foam, it is worth mastering a few simple techniques.
Follow our specialists’ advice and learn how to pour your favourite Brasserie Dupont beers like a professional, whether on draught or from the bottle. Your friends will thank you!
It all starts with a spotless glass
There is no secret to creating a beautiful head of foam: you need to start with a perfectly clean glass.
Wash the glass carefully by hand, without forgetting the bottom, then rinse it two or three times with clean water. The dishwasher can occasionally be used for a more thorough clean, but washing glasses by hand remains the best everyday habit.
Watch out for fingerprints too! Never hold the glass by the rim or put your fingers inside it. Cleanliness comes first!
How to pour a draught beer
Do you sometimes find yourself behind the bar at a party, helping out or serving your friends directly from the tap? Here are the right steps to follow.
Start by opening the tap fully in one smooth movement. If necessary, let the first splash run into a suitable container, then hold the glass under the tap at an angle of approximately 45°.
Be careful: the tap spout should never touch the glass, the beer or the foam.
Gradually straighten the glass to create the desired head of foam, then close the tap before the beer overflows. Avoid letting the final drops fall into the glass, as they could break the foam.
Once the beer has been poured, skim the foam at a 45° angle using the tool provided. Finally, rinse the outside of the glass and serve it on a clean beer mat.
Cheers!

How to pour a beer from the bottle
Here is another scenario: you are relaxing at home, a 75 cl bottle is chilling in the fridge and it is almost time for an aperitif with friends.
Take the bottle out of the fridge, check that it is clean and prepare your 33 cl glasses.
“Pop!” Remove the cork, then gently pour the beer into the tilted glass. Here too, the neck of the bottle should touch neither the glass nor the foam.
Gradually straighten the glass to create a beautiful head of foam, taking care not to pour too quickly.
Why is there sediment in the bottle?
As you know, the 75 cl bottle is Brasserie Dupont’s signature format. And refermentation in the bottle? That is our speciality!
After bottling, the beer is stored on its side in a warm room for four to six weeks. During this time, its aromas become more refined and complex. This process allows us to produce beers with no residual sugar.
Refermentation also creates a light, natural yeast sediment at the bottom of the bottle. This sediment is perfectly safe to drink, but we do not automatically pour it into our guests’ glasses.
Before serving the last part of the bottle, it is therefore best to ask whether they would like to taste it. With or without the sediment? Everyone has their own preference!
A beautiful head of foam until the first sip
No, no, do not stir the beer to make it foam!
Ideally, each beer should be poured just before serving. Avoid leaving the glasses on the table for too long before raising them for a toast.
Now all that remains is to put these tips into practice. Feel free to share your best pours on Instagram and tag Brasserie Dupont.
Most importantly, enjoy
